Today’s Lemon Meringue Puffs have been percolating in my mind for a while. I had the idea of lending the classic pie flavor to the format of a cream puff for a year or more now. But I was always unsure of how they would look. Silly little questions, like whether to pipe or dollop the meringue? Or what to fill the puffs with – lemon curd or lemon pie filling? There were a few prototypes, the curd didn’t make the cut and a simple dunk was the surprisingly easy answer to the meringue question. There were a lot of pitfalls along the way, but these Lemon Meringue Puffs are everything I hoped they could be.

These Sticky Toffee Pancakes are an anomaly. And no, it’s not because they’re pancakes of the sticky toffee variety. I’ve seen other (potentially better) versions of this breed of pancake elsewhere. No, what makes these pancakes strange is the fact that I made them. Oh sure, I’ve made pancakes before but this is a once-in-a-blue-moon occurrence. I’m much more of a savory brunch human, I’m pretty much a savory person no matter the mealtime. But for some reason when my brain landed on the concept of Sticky Toffee Pancakes I decided I had to make them mine. So I did and now you’re looking at them.

When it comes to dessert, I have terrible taste. And by “terrible” I mean trashy. Sure, I may make fancy desserts, but deep down all I want are wine gums. A bag of Sour Patch Kids is the fastest way to my heart. And for that reason, I don’t think I’m cut out for adulting. I seem to be downright rubbish at it. This year for my birthday, I classed it up a bit and ask for my weight in these fancy gummies in lieu of a birthday cake. But if I do find myself in the mood for a dessert that has actually seen the inside of an oven, 9 times out of 10 it will be a warm brownie situation. And these Hazelnut Brownies with Frangelico Ice Cream are the best warm brownie situation I could dream up.

I’ve never been one for Valentine’s Day. The concept of the day never sat right with me. If there were ever an aspect of a person’s life one should feel absolutely no shame about, it’s their relationship status. Whether you’re single or attached or somewhere in between, it says very little about you or your worth, in my opinion. So organizing a day to celebrate what is celebrated and praised all year round is ludicrous. Diagnosing the health of your relationship based on the displays of affection (or lack thereof) you received on one day – bonkers! And it’s not even a holiday, you still have to go to work. So I’ve decided Valentine’s Day is not a celebration of love. It’s the celebration of the color pink and frothy feminine desserts. So let’s kick the festivities off with these Raspberry Ricotta Mousse Cakes.
