The calendar may insist it’s still summer, but the weather here suggests otherwise. The warm weather has left Toronto after a season of record-breaking heat and its exit was painfully abrupt. I’m usually not one to complain about cooler temperatures but two months of heatwaves have seriously thinned my blood. Temps in the mid-to-low twenties (Celsius) are inspiring shivers, and frankly, it’s embarrassing. I’m a proud East Coaster, I learned to swim in the frigid Atlantic and relish picnics in the snow. And now look at me, reaching for my cable-knit the second the sun disappears. I know I will eventually pull it together. Come November, I’ll be back to my hearty self. But until then I have these Chickpea Curried Eggs to keep me warm.

Summer is winding down but no one told the humidity that. If I could use one word to describe Toronto’s current climate that word would be “swampy”. So if there was ever a time to bust out a bowl of cold noodles, it’s now. I’ve been down this road before. This time a couple of years ago, I was slurping on a cool bowl of chilled noodle soup. But this year I ditched the soup, swapped the noodles for Cold Kimchi Noodles (Kimchi Bibim Guksu), and found some Peanut Crusted Tofu. This isn’t just noodles, this is a bountiful bowl of spicy pickle-y peanut bliss.

So here we are in August. How did that happen? Every year I ask myself that same question. I look down woefully at my summer bucket list and scold myself for all the boxes left unticked. But this year, that isn’t the case. I kept my list sensibly short due to the COVID of it all. I figured there was no point in grand plans when even a trip to a grocery store requires more than its fair share of forethought. Initially, I was bummed but now that I’m more or less free of mid-summer blues, I’m thinking a small, manageable agenda is what I should’ve been doing all along. I mean, it’s easy to get the most out of summer when all you want are cold beers in the backyard and this Watermelon Fava Bean Salad.

It may only be Wednesday but I’m already thinking about the weekend. And nothing screams “weekend!” more than an elaborate brunch and acres of time in which to consume it. A mimosa helps too but I suppose it’s not mandatory. So even though its Wednesday, I urge you to conjure up a Saturday or Sunday-like attitude. These Cheesy Grits with Roasted Oyster Mushrooms deserve that. They’re far too good for a mid-week nosh, so please, delete hump day from your mind and pretend your on a seaside deck with nothing but the water and a blissfully blank schedule stretching out before you.
