Nachos are one of my favorite indulgences. If I see them on a pub menu they are automatically under consideration. Who am I kidding? They are automatically on the table. But as much as I love ordering them, I adore making them at home more. Why? Because I have full control over my nacho destiny. I can make the nachos I want to see in the world. And right now I want to see these Chickpea Sheet Pan Nachos. This technicolor dream boat features blue corn tortilla chips topped with saucy gochujang and smoked paprika chickpeas, gooey cheese, a radish and mango salsa, pickled red onions, avocado, and a sprinkle of Tajín. This is the stuff of pub grub dreams, so let’s make it.

I’ve always been a fan of thick-crust pizza probably because I’ve always been a fan of bread. Well, really carbs in general. In my neck of the woods, most restaurant pizza is Neopolitan style, which is great – I have no complaints. But it’s not the only kind of pizza I want to see in the world. I adore New York style, and I can get down with Detroit, but my true love is Sicilian-style pizza or Sfincione. Today’s Rosemary Focaccia with Mortadella and Pistachio Labneh features a pillowy Scilian-style pizza crust topped with rosettes of shaved mortadella, dollops of earthy and tangy pistachio labneh, and torn fresh mozzarella. This pizza is by no means a traditional sfincione but my goodness, is it delicious. So let’s make it!

There are few sandwiches as iconic as the club. And it’s not hard to see why. It’s essentially a BLT with the added bonus of shaved turkey or chicken. It comes in a double or even triple-decker and is generally accompanied by a jazzy toothpick. What’s not to love? Well, if you’re not so much about the meat, it’s not really the sandwich for you. Enter the Crispy Salmon Club – the pescatarian answer to the classic sandwich. This fully-loaded sandwich swaps the turkey for tender chunks of seared salmon and the bacon for crispy fried salmon skin. Piled high with juicy slices of tomato, butter wedges of avocado, and crisp lettuce leaves, this sandwich features all the charms of the original but with a seafaring bent.

I’m not the biggest dessert person. Sure, I like the odd slice of pie and summer just isn’t summer without a s’more or two. But my sweet tooth is fairly chill most of the time. And when it kicks up I tend to go for treats with a savoury edge. This may feel like a prelude to a dessert recipe but it’s not. Today’s Boursin No-Bake Cheesecake with Pickled Vegetables is very much a lunch option but it does appear in a dessert-like format. So what are we looking at here? This Boursin No-Bake Cheesecake features a crisp base of crushed wheat crackers accented with brown sugar and dried mustard topped with whipped cream cheese and Boursin filling decorated with ribbons of lightly pickled vegetables. It’s basically a giant cracker with cheese but you know, fancy.
