I know it’s not Tuesday, but I have these Maple Habanero Squash Tacos. And are you really going to deny them for the sake of an alliteration? I’m not. I’m not bound to food holidays. I like to live my life on the edge, so yeah, I’ll eat a taco on a Wednesday, tuck into one on a Sunday, and yes, even chow down on a Thursday – Tuesday’s natural enemy. I’m not exactly sure why I think those days are enemies, it just feels right. And yes, I agree this intro is fairly unhinged but I promise these tacos are not. Buttery squash wedges glossy with a maple habanero glazed tucked into warm corn tortillas and finished with a blistered jalapeño crema. There’s no way to say no to these any day of the week.

These Lamb Kofta Hoagies were supposed to be meatball subs. Yes, I know. It’s a long walk from there to here. But there are a host of good reasons why a plain old meatball sub didn’t make the cut. I’m sure the knee-jerk reaction is to assume, the meatball sub is not fancy enough for me. That’s not true. I have plenty of what I suppose you could call “low-brow” cravings and I indulge them frequently. Perhaps the meatball sub is too pedestrian and overdone? Well, that is sort of true. I don’t like to give people more of what they are currently swimming in. And there are meatball recipes abound. But I created the series Overthinking Classics as an outlet to play with my favorite dishes, which are actually super commonplace. So I don’t always consider being overly familiar a con.

Soup season is in full swing and classics like tomato soup are getting a workout. But in spite of the relative perfection that is chicken noodle and the like, variety remains the spice of life even if your life is currently soup. Today’s bowl of Brothy Butter Beans is a little off-the-beaten-path but only just. These tender beans are swimming in a meatless version of the classic Italian brodo accented with pesto and finished with gently wilted Swiss Chard. Sure, it hasn’t reached the dizzying heights of fame that cream of mushroom has. But give it time. It’s at least destined to be a classic in this household.

The worst form of precipitation has hit my corner of the world. Frigid rain has been falling at a near-constant rate these past few days. I feel like dry socks are a distant memory at this point. Is there anything worse than cold rain? I mean, I get that shoveling snow is a bummer. But you can still play in the snow. But cold rain? Well, I don’t know anyone who plays in that and I’m not sure I want to. Cold rain is just miserable, plain and simple. And it’s probably what mother nature has in store for us for the foreseeable future. So it’s time to break out the comfort food big guns. It’s time to mix up this Blistered Shishito Mac and Cheese.
