This past week we had our first blizzard. Yes, I know, it’s the last day of January. We have been truly spoiled in terms of winter weather. It’s been fairly dry and mostly mild, which is not generally what anyone thinks of when they think of Canada. The lack of snow has been good for the state of my winter boots and has saved my shovel of some wear and tear, but it has also wreaked havoc with my winter cooking plans. You see, there are a few things that I curiously never crave unless it resembles Siberia outside my window. Baked pasta is one of those things. So when those flakes started to fall, you best believe I got to work on this ‘Nduja Baked Rigatoni with Mushrooms & Kale.

I don’t know nor understand the origins of Taco Tuesday. Is it merely a product of convenient alliteration strung together by a marketing executive and disseminated through the public consciousness via adverts for taco kits? Or was it an established social norm, absorbed by the Internet and subsequently advertising firms? Basically, it’s a classic chicken or the egg paradox. We may never know how Taco Tuesdays became so ingrained in us. And I do mean ingrained. I feel a little guilty for not posting these Seared Haddock Tacos on a Tuesday. How nuts is that?

Have you ever fallen hard for a recipe? You know, a dish that you cannot stop making? I recently fell for a new one and in the year that I’ve known it, I’ve made it six times. And for me, that’s saying a lot. I generally only make recipes once before moving on. I get distracted so easily when it comes to food. I’m not particularly good at following recipes either, I can’t help but riff. Yet another side effect of my short culinary attention span. But last year I made Pups with Chopsticks’ Peking Chicken recipe and I was instantly smitten. I didn’t even pause to riff. I just made it. But then I made it again and again and finally the riffing started. These Lacquered Sesame Chicken Bowls with Asian Pear are the result of that riffing.

As a child of the 90s, I remember a time when pizza wasn’t taken seriously. When it was perfectly normal and not at all neglectful to be served a frozen pizza for dinner. A time before my brain knew words like “00 flour” or “Neopolitan style”. An era of unlimited toppings and crusts stuffed with any unholy thing a fast-food chain could dream up. Pizza was an uncomplicated crowd-pleaser, the taste of childhood, and a meal available in a head-spinning number of formats – personal, pan, and pocket just to name a few. Pizza wasn’t sacred, pizza was fun. And that is exactly the mood I was trying to capture with this Veggie Deluxe Baguette Pizza.
