This is the week I was supposed to be in Nova Scotia visiting my folks. Although I moved to Toronto nearly 13 years ago, I still go through bouts of homesickness. They usually increase in intensity during the summer months because, well, Nova Scotia is particularly spectacular in the summer. Usually, I visit around this time to ease this annual affliction. But due to COVID, I will be staying in Toronto this summer. So instead of swimming in my beloved Atlantic, star gazing, and building bonfires with my dad, I will be traveling via my dinner plate. I think it’s fair to say, these Lobster Fresh Rolls with Sambal Mayo won’t be the last East Coast fantasy meal you’ll find on this blog this summer.

I know including fruit in savory recipes can be a contentious issue. Some people are dead set against it and passionately so. And you know, that’s their right. You can find disgust where ever you see fit – I’m totally fine with that. But I also have the right to completely and totally disagree with those people. I love fruit in savory things, from pineapple on my pizza to grapes in my chicken salad. And if that makes you wrinkle your nose or viciously question my taste, I’m cool with that because I don’t care. It just means more Sweet Cherry Bruschetta for me.

When life or more specifically your weekly produce box, hands you beets pair them with Minty Lamb Meatballs and serve them on a bed of Whipped Feta. I know, far less quippy than the whole lemon to lemonade saying. I’m fairly certain they won’t be words to live by anytime soon. But these Minty Lamb Meatballs with their various accouterments could very well be gracing your table imminently. This is such a fabulous low key meal. Serving companions range from a variety of simple salads to the extremely chill bag of storebought pita. Like a little black dress, you can dress this meal up or down. And even if you’re full sloth come suppertime and add nothing to it, this platter still comes across as effortlessly elegant even if you’re far from it.

It may only be Wednesday but I’m already thinking about the weekend. And nothing screams “weekend!” more than an elaborate brunch and acres of time in which to consume it. A mimosa helps too but I suppose it’s not mandatory. So even though its Wednesday, I urge you to conjure up a Saturday or Sunday-like attitude. These Cheesy Grits with Roasted Oyster Mushrooms deserve that. They’re far too good for a mid-week nosh, so please, delete hump day from your mind and pretend your on a seaside deck with nothing but the water and a blissfully blank schedule stretching out before you.
