A traditional alfajor cannot be improved upon. Alfajores are, in my opinion, the perfect dessert. They have melt-in-your-mouth cookies, a creamy, complex, and gooey center, and they can be rolled in shredded coconut. Essentially they pluck at all my heartstrings. So you may be wondering why I would ever choose to alter them. Well, it’s certainly not to elevate them, as I mentioned above, this South American delicacy is the pinnacle of cookie perfection. I decided to introduce s’mores to the classic alfajores because I thought it would taste good. Seriously, that is the only reason. And you know what? I was right. But do these S’more Alfajores beat out the original? No, I wouldn’t say they’re better, they’re just different and variety is the spice of life.

So here we are in August. How did that happen? Every year I ask myself that same question. I look down woefully at my summer bucket list and scold myself for all the boxes left unticked. But this year, that isn’t the case. I kept my list sensibly short due to the COVID of it all. I figured there was no point in grand plans when even a trip to a grocery store requires more than its fair share of forethought. Initially, I was bummed but now that I’m more or less free of mid-summer blues, I’m thinking a small, manageable agenda is what I should’ve been doing all along. I mean, it’s easy to get the most out of summer when all you want are cold beers in the backyard and this Watermelon Fava Bean Salad.

It’s a long weekend here in Canada, so Toronto has emptied out. It seems everyone in our neighborhood has embarked on a kayak adventure or returned to a cottage. And we, lacking both, have done neither. Instead, we’re getting reacquainted with the lawn chairs that live in our backyard. And no, I’m not bitter about it because we’ve turned it into a full-on party complete with cake. This Rainbow Sherbet Funfetti Cake to be exact. And this cake is nothing if it’s not a party. This cake is so cheerful it makes me completely forget about my lack of kayak. Throw in a cooler full of beer, a good book, and something cooking low and slow on the BBQ, and my backyard is basically cottage country. Oh, and my neighbors are all gone, so its blissfully, if not eerily, quiet. Staycationing has never looked so good.

This is the week I was supposed to be in Nova Scotia visiting my folks. Although I moved to Toronto nearly 13 years ago, I still go through bouts of homesickness. They usually increase in intensity during the summer months because, well, Nova Scotia is particularly spectacular in the summer. Usually, I visit around this time to ease this annual affliction. But due to COVID, I will be staying in Toronto this summer. So instead of swimming in my beloved Atlantic, star gazing, and building bonfires with my dad, I will be traveling via my dinner plate. I think it’s fair to say, these Lobster Fresh Rolls with Sambal Mayo won’t be the last East Coast fantasy meal you’ll find on this blog this summer.
