I’m not really a salad person. Leafy greens just don’t turn my crank. I prefer to treat the lettuces and kales of the world as accents or companion pieces to something infinitely crunchier, tastier, and definitely not healthier. Give me a salad that is more pasta than vegetable, more cheese than leafy green. Give me a salad with a fried garnish. It’s still technically a salad, it just has more going for it. I do wish I was the kind of person that simply ate for fuel. It would make my late-night-snacking dilemmas a whole lot simpler and a lot less… counterproductive? But that’s just not me. So for me and people like me, there’s this Salt and Pepper Tofu with Mango Salad.

I, like most of the world, have a nearly insatiable taste for sushi. I didn’t have my first piece of maki until I 16 but I have more than made up for lost time in the 16 years since. As with most of my favorite foods, I have tried my hand at sushi in the past. My attempts have been serviceable but nowhere near restaurant quality. It’s the rice, I can’t get it right. And, of course, my lack of dexterity holds me back as well. My maki rolls lack structural integrity, so much so that I often find myself eating the evidence of a poorly executed roll, leaving me prematurely full and my serving platter woefully empty. This is why I love these Sweet Potato Tempura Onigirazu. They don’t require a deft hand or perfectly seasoned sushi rice and they crush my sushi cravings, without destroying my confidence.

Welcome to the next installment of my 2020 Christmas menu. In this post, I will be sharing the sides – the best part of any holiday meal, in my opinion. In this post, you will find three, yes three, recipes. It was a monster of a post to shoot and write and for some reason, I felt compelled to turn it into an Insta reel as well. I don’t say this to make you feel bad, I most definitely did it to myself. I only mention it to illustrate my dedication to the art form of making scene-stealing sides. And I think all the sides chronicled in this post have achieved lofty heights – yes, even the salad. I know Oktoberfest typically happens in September but I’m still feeling the flavor profile, in spite of it being November. We like to skip right to the holidays once the last jack-o-lantern hits the compost. But I’m still marinating in the fall of it all. I feel like holiday festivities encourage the rapid arrival of frosty nights. But having seen my city’s first snowfall this week – don’t worry, it didn’t stick – I am in no rush to dream of a white Christmas.
