Summer is peak salad season. I’m sure nutritionists everywhere would prefer salad didn’t have a season. But in my books, the dead of February really isn’t the time for a salad. Thankfully, we’re nowhere near the dead of February, we’re knocking on the door of prime summertime. And salads always seem to be on the menu, whether they be a leafy side-salad affair or a bread-and-cheese-heavy main event, like this Golden Beet Panzanella. And that really is the beauty of a salad – it can really fit any mealtime role you set out for it. Even dessert if you count Snickers Salad as an actual salad – but for the record, I don’t.

Summer arrived in an instant here in Toronto. Earlier this month we saw snow and now we’re waking up to temps in the mid-teens (Celcius) and comfortably reaching daily highs in the mid-20s. And with the sudden appearance of, dare I say, summer, comes a radical shift in the palette. Gone is the desire for soups, stews, and hearty meat-riddled pasta. In its stead is the nagging need for salads, popsicles, and various grilled vegetables and meats. And today I’m feeding one of those seasonal cravings with this Tortellini White Bean Salad.

Kale is a polarizing green. Some despise it with every fiber of their being while others are almost evangelical in their enthusiasm for the plant. I am somewhere in between. I think there are a lot of leafy hearty greens that deserve our attention, so I don’t buy into the whole “kale is the ultimate fuel” mentality. Nor do I dismiss it as a fibrous, inedible mess. Kale, like most foods, has its time and its place. And today its place is in my Kale Caesar Salad with Marinated White Beans.

Apparently, the Super Bowl is this weekend and I’m not going to watch it. In all the years I’ve had this blog, I’ve feigned a small amount of interest in the annual sporting event. You know, just for the excuse to make chicken wings or some cooky take on a late-night favorite, but no more. I made these Shawarma Home Fries because they seemed like a good idea and they were so I’m sharing them with you now. Their appearance coinciding with the Super Bowl is purely incidental. I have never enjoyed football but it’s totally cool if you do and if you want to eat these Shawarma Home Fries while you watch the game, so much the better.
