Iceberg Wedge Salads with Port Poached Figs & Roquefort Dressing

Iceberg Wedge Salads with Port Poached Figs with Roquefort Dressing

Congratulations! You made it through January. Bonus points if you made it through Canadian January. I know we’re not out of the woods yet – February is not exactly a sunny walk in the park. But when January dies, I remember winter months actually do come to an end. It’s all very encouraging. But we still have February to wade through, so let’s keep the comfort coming. Today I offer delicious solace in the form of a Roquefort-packed dressing draped over Iceberg Wedge Salads. Retro to be sure, but delicious nonetheless. Welcome to the first installment of Rhubarb & Cod’s Steakhouse Series.

Bún chả Lettuce Cups with Mung Bean Noodles

Bun Cha Lettuce Cups with Mung Bean Noodles

This week it got well and truly cold in Toronto. Layers and lots of them have been my priority all week long. But when I wasn’t willing my jeans to close over my second pair of long johns, I was thinking about places that are not here. Places where there’s no need for parkas, where flowers are in bloom 365 days a year, places where you can contemplate eating something other than chili night after night. Something like these Bún chả Lettuce Cups with their light, crisp texture and simultaneously rich and refreshing flavors. I’ll admit posting these beauties in the midst of winter isn’t the best idea I’ve ever had. But hey! There’s nothing wrong with a little culinary escapism. Thai Beef Salad with Cara Cara Oranges and Chili Lime Vinaigrette

Listen, I get it, the Internet needs another Thai Beef Salad recipe like I need another labneh post, but I don’t care, it’s just the rebel in me. I wanted to share this recipe with you because I love it deeply, passionately, obsessively. Also, it’s kind of healthy and there’s still a lot of January to get through and, let’s face it, I ’m not swimming in healthy recipe ideas. My brain is generally awash with fried chicken and the like. So, although you don’t need it, although you didn’t ask for it, I’m going to give you MY recipe for Thai Beef Salad and you’re going to sit there and take it…or just click away. Don’t click away.

Smashed Cucumber Salad w/ Chicken Satay & Red Curry Peanut Sauce

Smashed Cucumber Salad with Chicken Satay and Red Curry Peanut Sauce

Today’s Smashed Cucumber Salad with Chicken Satay and Red Curry Peanut Sauce will be my first recipe of 2019 and I’m thrilled. Believe it or not, salad paired with a simple protein is what I eat 90% of the time. It’s the type of meal that fills me up but leaves me feeling light. The antidote to weeks of gravy, stuffing and all manner of chocolate. This is not a resolution-oriented recipe per se, because, let’s face it, that red curry peanut sauce is not devoid of calories. No, this Smashed Cucumber Salad is what I would call enlivening. It’s spicy, crunchy, refreshing and full of umami. It’s a different kind of comfort food for a different kind of comfort. And, if like me, you had a bit too much cheer this holiday season, this salad is exactly what your body is asking for.
