Cold weather has finally hit here. It took a good couple of months to show up in earnest, but it seems to have settled in for the long haul. Unfortunately, or fortunately depending on who you ask, this cold spell has not resulted in much precipitation. I like active weather, it’s a hangover from my Maritime upbringing. I’m not really about that cold but sunny life. I want blizzards. I want that cozy feeling of looking out the window and seeing the full force of winter while I stir something comforting on the stove. But the weather so far has only obliged me once. So without blizzards, I will have to make do by stirring something comforting without the theatrics. And today that something comforting is this Gochujang Congee with Shredded Tofu.

As a child of the 90s, I remember a time when pizza wasn’t taken seriously. When it was perfectly normal and not at all neglectful to be served a frozen pizza for dinner. A time before my brain knew words like “00 flour” or “Neopolitan style”. An era of unlimited toppings and crusts stuffed with any unholy thing a fast-food chain could dream up. Pizza was an uncomplicated crowd-pleaser, the taste of childhood, and a meal available in a head-spinning number of formats – personal, pan, and pocket just to name a few. Pizza wasn’t sacred, pizza was fun. And that is exactly the mood I was trying to capture with this Veggie Deluxe Baguette Pizza.

Does anyone need a break? I know we just had a break but I swear this first week and a half of 2021 has felt like a whole dang year. So instead I’m going to talk about how my outrage and fear gave way to extreme tiredness, which led to this breezy no-cook meal that is not terrible for you. These Blistered Jalapeño White Bean Enchiladas were almost mac and cheese. Yes, when I first envisioned a cheesy, jalapeño-flecked cream sauce, I thought it was destined for a pot of tubular pasta. But when I got to the other side of the holidays, I found myself pasta-ed out. I do find it interesting that I was still game for cheese, in spite of inhaling quite a bit of it during the month of December. Clearly, when it comes to cheese consumption, I was built to persevere. But pasta and I needed a hiatus, so enchiladas it was. I have no doubt pasta and I will be reunited shortly.
