I know everyone is moving into holiday-mode and I get that the focus has shifted to the mashed potatoes of it all. But here I am, hanging out with my rice paper wraps trying to convince you you need them. It seems I have a nasty habit of breaking out the salad rolls when people are on the prowl for stuffing. But I think it stems from a holiday-related fear that I’m certain almost everyone shares: The fear of losing self-control around cheese plates, cookies and nog. I know, I know, one should never mess with an Italian classic. And here I am with a big ol’ bowl of this Green Carbonara just begging you to come at me, bro! Many people consider Italian cuisine to be hallowed ground and, despite all appearances to the contrary, I agree with them. The beauty of Italian food lies in its simplicity. There’s nowhere to hide when your culinary tradition is ingredient-centric. Quality produce takes center stage with a minimal flourish and few enhancements. The restraint is admirable, but apparently, I can’t handle simple elegance.

If you spend any amount of time poking around this blog, you’ll find there aren’t many cakes here. Actually, you’ll find there aren’t that many dessert recipes period. The truth is I’m no prolific baker. I find the activity rather stressful with a high degree of difficulty. But the desire to be better is always there. And as a person who enjoys aesthetics, I do feel a real desire to make beautiful desserts. So, every now and then, I try my hand at a layer cake to see if I’m just as clumsy as I was before. And with today’s Midnight Cake with Dark Chocolate Fig Ganache, I do feel like I’ve leveled up…maybe to, like, a green belt? Or is that really high? I never took tae kwon do.

Yes, I am aware that today is a Monday and we are as far away from Sunday brunch as any of us care to be. But I feel like we all need something to aspire to. On a Monday of all days don’t we need to be reminded of the joys that await us at the other end of the week? On a Monday don’t we deserve the warm, cozy thoughts that today’s Korean Rolled Omelette Breakfast Sandwich affords us? I say, hell yeah, we do! Mondays are jam-packed front to back and it’s nice to think that in less than a week’s time we’ll be able to linger over a cup of coffee once again.
