Smash burgers are having a moment. They seem to be served on every corner of every metropolis. They have been turned into everything from tacos to salads. Smash burgers are even served fries-supreme-style over their traditional side. We have reached peak smash burger and I for one am happy to see it. Burgers, smashed or otherwise, are a perfect food. But why would I present you with a classic burger when I already have one on this site? So instead here is my vegetarian take on the smash burger. These Maitake Smash Burgers feature maitake mushrooms marinated in ras el hanout and olive oil smashed and roasted between two large baking sheets. The mushrooms are piled onto a bun slathered with a mint aioli and topped with sumac onions and fresh cucumber. It may not be your classic burger stand burger but it’s still mighty fine,  so let’s make it!

I have a small confession to make. I developed today’s recipe because I liked the way its name sounded. The phrase Bangers and Butter Beans randomly strolled into my mind one day and I fell for the sonic romance of it. It sounded like something a Roald Dahl character would tuck into. It’s funny, you never know what will set a recipe in motion.  I think most people would imagine a recipe’s name would be the final touch rather than the starting gun. And it is true, this is more an exception than a rule. Sometimes a recipe is born from a particular detail in a restaurant meal or a dish of little consequence featured in a movie or TV show. Sometimes it’s as simple as finding an abundance of one ingredient at your local grocery store. And let’s not forget the OG food muse – seasonality.

There isn’t much in this world that I adore more than noodles. The chewy strands make me positively poetic. But I will spare you my romantic musings about this oh-so-special carb and get to the point. Noodles are my favorite and today’s Silken Tofu Noodles are my current reigning favorite noodles, making this dish my favorite-favorite. If that’s not a ringing endorsement for this bowl, I don’t know what is. So what are we looking at here? You’re looking at a tangle of Shanghai Noodles dressed in a creamy ginger-heavy silken tofu sauce topped with braised shiitake mushrooms and bamboo shoots, crisp cucumbers, sesame seeds, and chili crisp. In a word, this dish is divine.
