When I was growing up, fish sticks were among my favorite things in the world. Right up there with KD and Corn Pops. But it’s been a long time since I indulged. Somewhere in my early teens, I lost interest in those golden sticks. I’m sure my long-suffering mother was delighted to see me move on – her freezer-burned nightmare was over. But I still think about those dinners fondly from time to time. I’m convinced they would not thrill me in the same way. But still, the format is compelling – chicken nuggets but make it fish. So my mission was clear, I had to make Grown-Up Fish Sticks and that’s exactly what I did.

Before we go any farther, I should tell you there is no meat in these “meatballs”. Yes, I know. Two vegetarian recipes in a row. No, I haven’t converted to a meat-free lifestyle. I’m still rocking the four veggie nights a week while hatching a Christmas plan that will likely include a porterhouse. I wrote extensively about my food philosophy in my last post, so I won’t get into it again today. But what I will do is tell you how freakin’ excellent this Spaghetti with Lentil Meatballs truly is. Yes, really. Yes, I know the name sounds like a sad vegan food joke from a 90s sitcom. But in spite of its descriptive name, this dish is not severely lacking in joy. Quite the opposite. I think it’s quite exuberant and I made a video to prove it to you.

Growing up, tomato soup and mushroom soup were my comfort food go-to’s. And yes, I’m talking about the condensed stuff, nothing gourmet about it. I did have one rule – the soup had to be mixed with milk. If you thinned a tin of soup with water, I was not interested. I mean, I did have standards. These days I still get a craving from time to time, but I am much more high-maintenance. I have to be feeling beyond bad to reach for a can of soup, which has happened more than I care to admit in 2020. But when I’m feeling fine and a craving crops up, I’d much rather make my own Creamy Mushroom Soup than crack open a can.
